NON BAKE OREO CHEESECAKE



So many non-bake cheesecake recipes are available over the internet. Non-bake cheesecakes often turned up as desserts during the days when I had no baking knowledge, and my family became so tired of them. I used another recipe then, which my hubby felt was too cream-cheesy. He mentioned he was just eating a block of sweetened cream cheese. As a result, I have not done this for a long time until a request came from a friend. I searched for recipes but none seemed to be better than my former recipe.

God is good. Just days before I was to present the cake to my friend, my neighbour made an Oreo cheesecake and shared with my family. My son said he liked this better. It was more delicious than my former recipe, but I wanted to tweak the recipe a wee bit to make the cake taste a wee wee bit better. Then another friend gave me some snow powder and cake liner, just in time to decorate the cake. God is so so good!

NON BAKE OREO CHEESECAKE
Ingredients
200g Oreo biscuits, finely crushed
120g melted salted butter (may not use all)

2 1/2 tsp gelatine powder
40-50ml warm water

2 large egg yolks
100ml full cream milk
120g sugar
320g cream cheese, softened and cubed

1 tbsp lemon juice

250g thickened cream, cold

6 pieces Oreo biscuits, largely crushed

For decoration
9 pieces Oreo biscuits, whole
100g Oreo biscuits, finely crushed
Some snow powder

Method
  1. Using a food processor, crush Oreo biscuits till fine. Over very low heat, melt butter.
  2. Prepare a 9" round cake ring, line with cake liner. Secure cake ring on cake base using adhesive tape.
  3. Stir in crushed biscuits into butter. Pour into cake ring, spread evenly and press till firm. Chill in fridge.
  4. Pour gelatine powder into a cup of warm water, stir to dissolve completely. Place cup in a bowl of warm water to keep gelatine in liquid state.
  5. Place egg yolks, milk, sugar and cream cheese in a pot. Gently simmer until sugar dissolves and batter becomes smooth. Remove from stove. Pour in dissolved gelatine and lemon juice, mix well.
  6. Whip cold thickened cream till stiff, add in cheese batter and gently fold in largely ,and a little extra finely, crushed Oreo biscuits. Pour batter into prepared cake ring, chill in fridge to set.
  7. For decoration, I poured additional finely crushed biscuits on top of cake and arranged whole Oreo biscuits 30 minutes later. Needed to adjust the standing biscuits during the chilling process to ensure they did not slant or fall. Once cake becomes firm, dust some snow powder.
