Bean Paste Beef Hor Fun

Today I shall try my hand at beef hor fun. First try, so plenty of room for improvement.

I am using dried hor fun. Just blanch in boiling water for about 3 minutes, cool in cool water, drain and set aside.

If using fresh hor fun from the market, remember to peel away all the noodles before frying. There is no need to soak the noodles in water.


Ingredients:
2 pkts of 185g dried for fun
250g beef
1 carrot, sliced
A bundle of vegetable, cut to bite sizes (I use choy sim)
5 cloves of garlic, minced
1 tbsp bean paste
2 cups of beef broth (I used 1/2 cube of beef stock essence + dried scallops to make the broth)
Oil for frying

Marinate:
1 tbsp dark soy sauce
Pinch of sugar
Dash of pepper
Some corn flour

Seasoning:
Dash of pepper
Some light soy sauce
1/2 tsp sugar

Method:
1. Marinate beef for about 10 min. 
2. Blanch dried hor fun for 3 minutes, drain and place in cool water. Give a stir and drain well.
3. In a heated wok, place 2 tbsp oil in and fry hor fun until slightly charred. Remove. (If using fresh noodle, no need to add oil.)
4. Put in 1 tbsp oil, sautee 1 tbsp of minced garlic till fragrant. Add in vegetable and stir fry till cooked. Remove vegetable from wok and set aside.
5. Put in 1 tbsp oi, sautee 2 tbsp of minced garlic till fragrant. Add in bean paste and fry for a while. Mash the beans. Add in beef and carrot. Fry for a little while,  pour in beef stock. Season the dish and thicken with cornstarch. I added some beaten egg here to give a nice colour. Pour in the prepared vegetable.
6. Place noodle in a serving plate, pour in enough gravy to cover the noodle. Serve hot.



Verdict:
I made mine too soupy. Need more cornstarch to thicken the soup. Can add oyster sauce to make the dish more savoury. On the whole, the family enjoyed this for lunch (to my surprise ~.~).
